A 100% organic Timilia pasta, the result of an entirely Sicilian supply chain that oversees the grain from cultivation through to the drawing process. Timilia, also known as Tumminia, is an ancient short-cycle durum wheat variety that was already present in Sicily during the Greek era: a true jewel of Sicilian agriculture. Stone milling preserves the wheat germ intact, rich in vitamins and trace elements, while bronze drawing gives the surface that characteristic roughness which, combined with the shape, perfectly holds any sauce. Slow drying at low temperatures and the delicate quality of the Timilia gluten ensure excellent digestibility: a pasta that does not weigh you down or cause bloating.

Cook the corallini directly in broth or soup, or in abundant salted water following the cooking times indicated on the label. As this is whole wheat pasta, it may require 1-2 minutes longer than white pasta.
